- 在头锅和上级的领导下,听从指挥,严格按照菜式规定要求、烹调方法、烹制菜肴,保证出品质量。
- 掌握所烹制菜系的基本特点,并熟知本店经营菜式的烹制要领和技术要求,抓好各种出菜成品的标准,达到味感、质感、观感、营养卫生的标准。
- 熟悉主料、配料、调味的使用,掌握炒、熘、炸、烹、……等24种基本烹调技法,了解嫩滑爽、软糯烂、酥松脆等烹调特点。
- 协助头锅做好开发性原料的组织计划;保证所需用具的洁净与使用功能;保证上菜的速度,在规定的时间内完成头菜及尾菜的上菜任务。
- 做到帮上教下、以身作则,带好助理见习生、互相协助,提高工作效率,按时完成上级交办的各项工作任务。
- 严格按照菜品主、辅料的投料比例、卫生标准烹制菜肴;做到安全、卫生、节能。
- 熟知本部门的专业知识和安全消防、卫生法规。熟知本班组水、电、气、油等能源的使用操作。
- 所烹调菜肴的烹调方法与口味符合菜式规定、能够保证出品质量。
- 能够独立辨认基本干湿货源产地,能独立处理200人以下的宴会。
- Communicates to your superior any difficulties, guest or internal customer comment and other relevant information 有关客人意见和其它相关困难时,与你的当值主管进行沟通。
- Establishes and maintains effective employee working relationships建立和维持有生气的同事工作关系
- Attends and participates in daily briefings and other meetings as scheduled按照预定出席和参与日常简报和其它会议
