1. 协助厨师长统筹闽菜厨房日常运营,包括菜品研发、标准制定、成本控制及出品质量把关;
2. 负责闽菜菜单的本地化优化与季节性更新,确保风味正宗、呈现专业、符合英迪格酒店品牌调性;
3. 管理闽菜厨房团队排班、培训与绩效辅导,提升团队专业能力与服务协同效率;
4. 严格执行食品安全、卫生操作及后厨安全管理规范,确保符合国家餐饮行业标准及酒店集团运营要求;
5. 配合市场与餐饮部开展美食推广活动、主题晚宴及VIP客制化餐饮服务,提升宾客用餐体验与品牌美誉度。
1. 大专及以上学历,烹饪类、酒店管理类相关专业优先;
2. 具备5年以上高星级酒店中餐厨房工作经验,其中至少2年担任闽菜主厨或副厨师长岗位;
3. 精通闽菜传统技法与经典菜系(如闽南菜、泉州菜等),熟悉本地食材特性及供应链资源;
4. 具备扎实的厨房管理能力,熟练掌握标准化出品流程、成本核算及人员带教方法;
5. 持有有效健康证及高级中式烹调师职业资格证书(二级/技师级优先);
6. 具备良好的跨部门沟通协作能力,能适应快节奏、高标准的国际品牌酒店工作环境。
