Key responsibilities include:

• Manage and oversee daily restaurant operations, ensuring exceptional service quality and guest satisfaction in line with brand standards.

• Lead, train, and motivate the service team to deliver professional, personalized, and consistent dining experiences.

• Maintain high standards of food, beverage, and wine service, ensuring proper service sequence, presentation, and etiquette.

• Manage wine service operations, including wine list development, wine pairing recommendations, inventory control, and proper storage.

• Advise guests on wine selections and pairings, enhancing the overall dining experience.

• Ensure compliance with hygiene, food safety, health, and safety regulations.

• Monitor and control operational costs, including labor, beverages, wine inventory, and supplies.

• Handle guest feedback and complaints professionally, ensuring timely service recovery.

• Coordinate closely with Kitchen, Bar, Purchasing, and other departments to ensure smooth operations.

• Prepare work schedules, manage staffing levels, and conduct performance evaluations.

• Support revenue optimization through upselling strategies and excellent guest engagement.

• Ensure all brand standards, service procedures, and SOPs are consistently applied.

• Represent the restaurant professionally in all guests and partner interactions.

Responsible Business & Compliance

All operations will be conducted ethically, transparently, and in compliance with local laws and company policies. I will ensure a safe and secure environment for guests, hosts, and assets while maintaining positive relationships with local communities and stakeholders.

Skills & Experience

The role requires:

• Minimum 3–5 years of experience in a similar role at upscale or luxury hotels and restaurants.

• Diploma or higher in Hospitality Management, Food & Beverage, or related fields.

• Certified Sommelier / WSET Level 2 or above / Wine & Spirit Education qualification is required.

• Please note: Only shortlisted candidates will be contacted. Strong knowledge of wine service, wine pairing, beverage operations, and fine dining standards.

• Food and beverage terminology, application, operation, wine service, costs, menu development and controlling inventory.

• Familiar with food and hygiene codes, policies and procedures.

• Excellent leadership, communication, and guest engagement skills.

• Good command of spoken and written English; additional languages are an advantage.

• Strong organizational, financial, and operational management skills.

• Passion for service excellence and attention to detail.

I maintain a thorough understanding of Six Senses brand standards, operational guidelines, and service philosophy.
