Reports directly to the Operations Manager or Assigned in charge in his absence.
DUTIES AND RESPONSIBILITIES- Develop food safety team
- Prepare FSMS policy with FS team leader.
- Present the final FSMS procedure to FS team leader to be approved & to be started implemented.
- To determine FSMS objectives with FS team.
- To coordinate FS team meeting, pre-preparation for these meetings, prepare the meeting agenda --- to prepare report after each meeting.
- Identify & collect products lists from Executive chef
- Make the products description according to the collected data from Executive Chef.
- Identify the Hazards for each process --- with FSMS team members.
- Make HAZARD analysis--- with FS team members.
- Determine Critical limits --- with FS team members.
- Establish Preventive Measures (Policies, procedures, work instruction, records) --- with FS team members.
- Establish a Monitoring system --- with FSMS team members.
- To determine the corrective action in case of deviation from the acceptable limits with FSMS team members.
- Develop HACCP Manual & review yearly with FS team & obtain the approval from hotel manager
- Develop SOPs ( standard operating procedure) & review yearly with FS team & obtain the approval from hotel manager
- Develop SSOPs ( sanitation standard operating procedure) & review yearly with FS team & obtain the approval from hotel manager
- Develop PRP ( pre request program) & review yearly with FS team & obtain the approval from hotel manager
-Coordinate FSM system between all departments.
-Conduct adequate food hygiene & food safety TRAINING for all food handlers (F&B staff):
- Basic food hygiene ( Internal)
- Basic food hygiene ( external)
- Intermediate food hygiene ( Internal)
- Critical limit from receiving till end product
- Personal Hygiene.
- Cleaning & Sanitation processes.
- Storage procedure
- Vegetable sanitizing procedure
- Hazardous chemical handling & using
- New hire food safety orientation
-Coordinate with Check Safety First Company the hygiene training regularly.
-Prepare training file for each employee contains all trainings attended
-Design flow diagrams for each process --- with the executive chef & Food & Beverage Manager.
-Make verification of flow diagrams --- with FSMS team members.
-To determine CCPs according to the FSMS decision tree.
-To be the Internal Auditor --- responsible for carrying out daily internal audits and verification methods, as well as data and documentation control of the FSMS system, coordinate all external and on the job training projects and ensuring that all FSMS plan procedures are validated in coordination with the external consultants.
-Supervision of the implementation of the following:
-Hygiene policy from receiving till serving
-Measuring of the general chemical parameters (Cl2 & pH) in tap waters.
-Follow up & collect the microbiological analysis reports for food, beverage & water.
-Follow up & collect the chemical analysis reports for water.
-Follow up with stewarding and check pot & dish washing machine in the hotels.
-Follow up the pest control program & schedule in the hotel especially in the food & beverage premises areas.
-Follow up with Stewarding & check the cleaning & sanitation program & schedule
-Follow up with engineering department & present maintenance report for maintenance requests needed to the food & beverage premises.
-Follow up the reports of Cristal Company for the supplier hygiene audits to update the FSMS team & purchasing department with the results.
- Check cold room & dry storage temperature twice daily & keep record
- Follow-ups with receiving agent to keep record for all delivery & file collect to FS office
- Routine inspection buffets & keeps temperature record for Hot, & cold
- Follow ups with kitchen to keep record for, cooking, reheating, cooling, defrosting, vegetable sanitizing
-To collect all FSMS record to be arranged in FS office.
