Key Responsibilities
Food Safety & Compliance Management
Develop, implement, and maintain the hotel’s HACCP and GMP systems.
Ensure compliance with Thai food safety laws and IHG standards.
Conduct regular hygiene inspections of kitchens, restaurants, bars, stewarding, receiving, and storage areas.
Monitor temperature logs, pest control programs, cleaning schedules, and sanitation records.
Ensure proper food handling, labeling, storage, and FIFO practices are strictly followed.
Audit & Risk Control
Lead internal hygiene audits and prepare the hotel for external inspections.
Act as the primary liaison during government health inspections.
Identify potential risks and implement corrective and preventive actions.
Maintain documentation and records to ensure full audit compliance.
Training & Development
Conduct regular food safety and hygiene training for all F&B and stewarding colleagues.
Organize refresher courses and certification programs.
Promote hygiene awareness across all departments.
Develop SOPs and hygiene guidelines for new initiatives and menus.
Operational Support
Work closely with Executive Chef and F&B leadership to ensure safe kitchen practices.
Support menu development from a food safety perspective.
Oversee waste management and sustainability practices related to hygiene.
Monitoring & Reporting
Prepare monthly hygiene reports and improvement plans.
Monitor chemical usage and cleaning standards.
Track non-conformance issues and ensure timely resolution.

Qualifications & Experience
Bachelor’s degree in Food Science, Microbiology, Public Health, or related field
Minimum 3–5 years of experience in hygiene, food safety, or quality assurance (hospitality preferred)
Certified HACCP practitioner (preferred)
Strong knowledge of Thai food safety regulations
Good command of Thai and English
Experience in luxury hotel environment is an advantage
