As a Food Safety & Hygiene Executive, you are responsible for maintaining the highest standards of food safety, hygiene, and workplace safety across all hotel operations. You need to work closely with the Culinary, Food & Beverage, and other related departments to ensure full compliance with HACCP, HFSMS, and local authority regulations.
Key Responsibilities
- Assist in implementing and maintaining the HACCP & HFSMS programs in accordance with hotel and local regulatory requirements.
- Conduct daily Food & Beverage hygiene audits, prepare action plans, and submit detailed reports to management.
- Train culinary and F&B team members on hygiene practices, food safety standards, and proper sanitation procedures.
- Supervise daily operations to identify malpractices, record findings in logbooks, and ensure corrective actions are implemented promptly.
- Monitor hot and cold holding units, food storage areas, and preparation zones to ensure compliance with food safety standards.
- Ensure strict adherence to FIFO (First In, First Out) and proper date labeling systems.
- Inspect garbage rooms and waste disposal procedures to ensure hygiene standards and proper waste segregation.
- Coordinate monthly inventory checks with the Finance team to ensure food safety compliance and proper stock management.
- Schedule, conduct, and follow up on HACCP & HFSMS meetings to drive continuous improvement.
- Work closely with the Executive Chef and Executive Sous Chef to ensure proper communication and implementation of safety directives.
- Implement corrective and preventive actions for non-compliance with HACCP standards.
- Ensure compliance with fire safety procedures and emergency response protocols.
- Maintain effective communication with internal departments, suppliers, government authorities, and external auditors.
- Support the Continuous Improvement Programme to enhance overall food safety and hygiene performance.
- Build strong teamwork within the Culinary and F&B teams to foster a culture of safety and accountability.
- Perform additional operational duties as assigned to maintain the hotel’s food safety management system.

- Good command of English & Malay (spoken and written)
- Proficient in Microsoft Office (Word, Excel, PowerPoint)

Qualifications
- Bachelor’s Degree in Hospitality / Food Science / Environmental Health

- Good command of English & Malay (spoken and written)
