全面负责中餐厨务、菜品研发、出品管控及厨房运营,牵头厨房筹备、设备调试、人员搭建;
制定菜品体系、出品标准,研发特色菜、宴席菜单;
管控食材成本、毛利率及损耗,规范采购验收、加工储存流程,保障食品安全;
负责厨务团队管理、培训、考核;统筹宴会、VIP用餐出品,处置菜品类客诉;
严守食品安全法规,做好卫生及设备维保;
研究当地餐饮市场,提出新项目并协助菜单研发。
8年及以上高星级酒店中餐经验,5年及以上同岗位经验;
精通粤菜/潮汕等主流菜系烹饪,具备极强研发、成本管控、团队管理能力,熟知食品安全规范;
高端酒店厨房筹备经验、厨艺精湛者优先
