  3. Minimum seven (7) years at F&B Management position in Hotel industry.

 

What’s the job?

Responsible for managing all personnel and daily operations of all Resort F&B outlets and kitchens. Oversees the quality service of food, timeliness of food service, and staff productivity to ensure that it meets hotel quality standards. Monitors and controls food costs and service & preparation inventory to meet revenue goals.  Ensures that Food & Beverage operations are in compliance with brand standards and federal and state health and safety regulations. 

Your-day-to-day

PEOPLE

  • Direct day-to-day staffing requirements, plan and assign work, and establish performance and
    development goals for team members. Provide mentoring, coaching and regular feedback to help
    manage conflict and improve team member performance. 
  • Educate and train all team members in compliance with governmental regulations. Ensure staff is
    properly trained in quality and service standards and has the tools and equipment to carry out job
    duties.
  • Promote teamwork and quality service through daily communication and coordination with other
    departments. 
  • Identify and develop F&B talent pool.
  • Review F&B staff operations and initiate performance appraisals, salary adjustments, disciplinary measures, and other HR-related actions.

FINANCIAL 

  • Participate in the preparation of the annual departmental operating budget and financial plans. Monitor budget and control expenses with a focus on food, beverage, and labor costs. 
  • In partnership with other department heads, identify additional sales opportunities to enhance revenue. Drive promotions that deliver great dining experiences for our guests. 
  • Ensure all credit and financial transactions are handled in a secure manner. 
  • Consult with GM on maximizing revenues and profitability of F&B outlets.
  • Accountable for financial results of F&B outlets.

GUEST EXPERIENCE

  • Develop strategies to improve F&B programs and operations to enhance operational standards and guest experience.
  • Establish and regularly review menus and service delivery and implement innovative concepts.
  • Respond appropriately to guest complaints.
  • Make appropriate service recovery gestures in accordance with established guidelines.
  • Ensure that all food and beverage facilities and equipment are cleaned, vacuumed, and properly stocked according to anticipated business volume. Notify engineering immediately of any maintenance and repair needs. 
  • Establish and achieve quality and guest satisfaction goals. Respond in a courteous and prompt manner to all guest questions, complaints and/or requests to ensure a high level of guest satisfaction. 
  • Analyze guest insights to identify and meet customer expectations and build on guest loyalty.

RESPONSIBLE BUSINESS

  • Monitor food and beverage performance of all F&B outlets through regular review and implement necessary changes. 
  • Work with hotel leaders to develop creative and innovative ideas, pilot new F&B concepts to capitalize on potential opportunities.
  • Coordinate with General Manager for consistency and common approach to F&B operations.
  • Ensure compliance with health, safety, and sanitary standards.
  • Manage vendor relationships and develop strategic alliances with vendors.
  • Ensure compliance with procurement and disposal rules and regulations.
  • Regularly generate written and oral reports of kitchen operations to the General Manager.
  • Communicate with the Purchasing department and vendors to source appropriate F&B supplies and equipment.
