As a Demi Chef, you’ll prepare an array of dishes for our restaurant, bar, room service, and banquets. In this role, we’re particularly seeking someone with a strong background in banquet operations, capable of delivering high-quality dishes for events of all sizes with precision and flair.

Your culinary passion and creativity will shine through in every plate, and you’ll take pride in maintaining exceptional hygiene, consistency, and presentation standards. You’ll also support, lead, and develop our Commis Chefs, Cooks, and Stewards — working closely with other kitchen leaders to ensure smooth and efficient operations.

Flexibility is key, as this role will require availability across breakfast, lunch, and dinner shifts to meet the dynamic needs of our busy hotel kitchen.

Your Day to Day:

  • Prepare and produce high-quality food across all outlets, following standard recipes and presentation guidelines.
  • Showcase your strong banquet experience by delivering exceptional dishes for conferences, events, and special functions.
  • Be flexible and adaptable, catering for a full buffet breakfast, all-day in-room dining, and a bespoke à la carte dinner service.
  • Work closely with the Front of House team to ensure a seamless guest experience, including meal service where required.
  • Inspire passion, enthusiasm, and positivity within the team to foster an engaged and high-performing kitchen culture.
  • Champion food safety and hygiene by identifying and managing hazards, maintaining accurate HACCP records, and upholding all WH&S and Crisis Management standards.
  • Support your team in consistently delivering the highest levels of guest satisfaction.
  • Manage goods deliveries and verify invoices accurately for accounting purposes.
  • Perform additional duties as required to meet the dynamic needs of the business.

What We Need from You

  • Minimum 1-2 years’ experience as a Chef with a passion for culinary arts and demonstrated experience in banquet operations
  • Qualifications in Commercial Cookery/Culinary Arts from a registered training provider 
  • Experience working with and creating experience with a variety of cuisines is essential 
  • Strong written and verbal communication skills 
  • Team player with a collaborative approach to work 
  • Strong attention to detail, organisational skills, and be effective at time management 
  • Ability to work in a fast-paced environment and prioritise workload 
  • Look smart – wear your uniform with pride and adhere to personal grooming and hygiene standards 
  • Flexibility to work a 24/7 rotating roster – nights, weekend and public holiday shifts are all part of the job
