What is the Job?
As Commis I & II, you will support kitchen operations by handling, preparing, regenerating, and finishing frozen and semi-processed food items while maintaining strict hygiene, food safety, and quality standards in line with hotel SOPs.
Key Responsibilities
- Handle frozen, chilled, and semi-processed food items according to kitchen SOPs.
- Follow correct thawing procedures using controlled refrigeration methods.
- Reheat or regenerate food items according to standard temperature guidelines.
- Ensure correct portion control and plating as per hotel presentation standards.
- Prepare fresh accompaniments such as salads, sauces, and garnishes when required.
- Maintain strict adherence to FSSAI standards and hotel food safety procedures.
- Monitor freezer (-18°C), chiller (2–5°C), and hot holding temperatures regularly.
- Maintain food safety documentation including temperature logs and cleaning schedules.
- Participate in hygiene inspections and internal food safety audits.
- Ensure zero tolerance for under-cooked or partially heated food items.
- Conduct tasting sessions before service and maintain plating consistency.
- Address guest feedback related to food quality and take corrective action when required.
- Support training of team members in food handling and kitchen hygiene procedures.
What We Need From You
- Diploma or Degree in Hotel Management / Culinary Arts preferred.
- Minimum 2–3 years of experience in a hotel or commercial kitchen.
- Ability to work in a fast-paced hospitality environment.
- Strong understanding of food hygiene and safety practices.
- Physical stamina to stand for extended periods and perform kitchen duties.
- Ability to lift or move items up to 23 kg when required.
- Flexible to work shifts including weekends and public holidays.
