We’re looking for a passionate Chief Steward to lead our stewarding team and ensure the highest standards of cleanliness, hygiene, and operational efficiency in our kitchens.   • Supervise all stewarding operations to maintain optimum cost efficiency and high-quality sanitation standards.
  • Monitor daily cleaning and maintenance of kitchen areas, equipment, and utensils to ensure compliance with hygiene and safety regulations.
  • Ensure proper waste management and recycling practices are followed.
  • Continuously analyze and control costs, breakage, and equipment condition.
  • Monitor and evaluate the quality of support provided to other departments.
  • Maintain accurate inventory levels and control par stocks of materials and equipment.
  • Lead, train, and motivate the stewarding team to achieve departmental goals.
  • Conduct daily briefings and regular meetings to communicate objectives and updates.
  • Participate in recruitment, performance evaluation, coaching, and disciplinary actions to ensure productivity and team efficiency.
  • Assist in creating and implementing training plans and materials in coordination with the Director of Food & Beverage and Executive Chef.
  • Develop and maintain an up-to-date operations manual for the stewarding section.
  • Manage administrative records, including finance, standards, training, outlet support, and meeting documentation.
  • Coordinate with Purchasing for stewarding-related purchases and with accounting for inventory control.
  • Liaise with the Engineering Department for preventive maintenance and repair schedules.
  • Support the development of departmental goals, policies, and procedures.
  • Stay informed on industry trends, best practices, and new equipment through trade publications and site visits.
  • Benchmark operations against local competitors to identify opportunities for improvement.
  • Participate in stewarding operations when required.
  • Perform related tasks and special projects as assigned by the Director of Food & Beverage or Executive Chef.

What we need from you

This job leads a team of Stewarding professionals in a large full-service, luxury flagship hotel with multiple dining outlets and high-volume banqueting and catering operations. The focus is on maintaining the highest standards of cleanliness, sanitation, and organization in all kitchen and service areas, while ensuring efficient support to the culinary and food & beverage teams through effective supervision, training, and quality control.

Experience 

  • 3–5 years of experience in stewarding or kitchen operations, with at least 1–2 years in a supervisory role
  • Strong knowledge of hygiene and sanitation standards (HACCP)
  • Basic English proficiency (spoken and written)
