You will be responsible for managing all operations related to meat, poultry, and fish preparation, as well as overseeing the storage and distribution of prepared items to various kitchen outlets. This position ensures high standards of hygiene, portion control, and quality, while maintaining efficiency and minimizing waste.

A little taste of your day-to-day:

Every day is different, but you'll mostly be:

• Break down carcasses and whole cuts into specific portions for kitchen use (steaks, roasts, filets, etc.)
• Ensure correct labeling, dating, and rotation (FIFO) of all meat and poultry items.
• Oversee the preparation of bulk mise en place
• Supervise and train junior colleagues in butchery techniques and safety standards

What We need from you:

• Lifting and moving heavy items (meat carcasses, large stockpots, etc.)
• Strong knowledge of meat cuts, seafood preparation, food safety, and HACCP standards
• Ability to deal with difficult interactions and work under pressure
• Flexibility to respond to a variety of different work situations
• A focused individual with passion, personality, individuality, integrity, creativity and drive for continuous improvement.
