Bakery Chef (Lao Citizen)

We are looking for a skilled and reliable Bakery Chef (Lao Citizen) to join our culinary team and support bakery operations across Crowne Plaza Vientiane and Holiday Inn & Suites Vientiane. The Bakery Chef will be responsible for producing daily fresh breads, viennoiseries, and bakery items for all outlets, banquet events, and external catering activities.

This role requires consistency, precision, time management, and the ability to work in a high-volume, fast-paced environment. The ideal candidate is passionate about baking, eager to learn, and committed to delivering high-quality products that meet international hotel standards.

A little taste of your day-to-day:

1. Daily Bakery Production

• Produce a full range of breads, rolls, buns, pastries, and breakfast bakery items for both hotels.
• Ensure consistency in texture, flavor, size, and presentation.
• Follow standard recipes and portioning guidelines.

2. Support for Banquets & Events

• Prepare bakery items for conferences, weddings, corporate events, embassy functions, and outside catering.
• Work closely with the Cluster Pastry Chef and Banquet Kitchen to meet event timelines and volume requirements.

3. Quality & Hygiene Standards

• Maintain strict food safety and hygiene practices (IHG & HACCP standards).
• Ensure cleanliness and organization of the bakery section at all times.
• Properly store all ingredients and finished products.

4. Teamwork & Communication

• Coordinate daily production with the pastry team and culinary leadership.
• Assist in training junior staff on bakery basics and work techniques.
• Communicate any issues with equipment, production, or ingredients.

5. Operational Efficiency

• Monitor inventory, assist with ordering of ingredients, and minimize wastage.
• Ensure proper maintenance and safe operation of bakery equipment such as mixers, ovens, proofers, etc.
• Help with new item testing and introduction when required.

What We need from you:

• Lao citizen (required).
• Minimum 4–5 years of experience in bakery or hotel kitchen bakery operations.
• Strong knowledge of bread doughs, fermentation, shaping, baking temperatures, and basic pastry techniques.
• Ability to work early-morning shifts and manage production independently.
• Reliable, hardworking, and able to follow instructions with accuracy.
• Willingness to learn and grow under the guidance of the Cluster Pastry Chef.
• Basic English communication skills preferred.
