Job Overview :

Assist with managing the food and beverage operations of the hotel to ensure the achievement of established food and beverage quality and guest service quality standards and departmental revenue and profit goals.   

Adhere to local regulations concerning health, safety, or other compliance requirements, as well as brand standards and local policies and procedures.

Duties and responsibilities :

Financial returns:

  • Participates in the preparation of the hotel's revenue plan and marketing programs 

  • Ensure all credit and financial transactions are handled in a secure manner. 

  • Works with Manager in the preparation and management of the Department’s budget

  • Controls and analyzes, on an on-going basis, the following:

  • Sales

  • Costs

  • Quality and presentation of food and beverage products

  • Service standard

  • Condition and cleanliness of facilities and equipment

  • Quality of entertainment

  • Guest satisfaction

  • Marketing

 

People:

  • Works with Manager on Manpower budget.

  • Manage day-to-day staffing requirements, plan and assign work, and establish performance and development goals for team members.

  • Provide mentoring, coaching and regular feedback to help manage conflict and improve team member performance. 

  • Conducts daily briefings, Food and Beverage Meetings and other meetings as needed to obtain optimal results.

  • Ensure staffs are properly trained on quality and service standards, has the necessary tools and equipment, and is empowered to carry out job duties.

     

 

Guest experience:

  • Ensure all food and beverage equipment are in proper operational condition and are cleaned on a regular basis. 

  • Ensure that all food and beverage facilities including banquet/convention space are cleaned, vacuumed, and properly stocked according to anticipated business volume. Notify engineering immediately of any maintenance and repair needs.

  • Establish and achieve quality and guest satisfaction goals. Respond in a courteous and prompt manner to all guest questions, complaints and/or requests to ensure a high level of guest satisfaction.

 

Responsible business:

  • Assists F&B Manager in keeping an up-dated Hotel Policies and Procedures file and up-dated files on all Food and Beverage matters

  • Monitor local competitors and industry trends. Review and approve menu design and concepts with Executive Chef. 

  • Conduct proper food and beverage inventory procedures. Determine minimum and maximum stocks for all food, beverage, material, and equipment.

  • Ensure the security and proper storage of food and beverage products, inventory and equipment, and replenish supplies in a timely and efficient manner while minimising waste. 

 

Accountability :

 Supervises a large number of team members in one or two food and beverage outlets and may include banquet facilities.  May oversee Restaurant Managers & Supervisors. 

Qualifications and requirements :

Bachelors Degree/ Diploma in Hotel Management or equivalent 

3-4 years related experience, including managerial experience
