2. 监督现金的处理和存放程序。
3. 制定并指导员工执行现金安全制度。
4. 监督服务设备的维护保养。
5. 监督客用设施和服务的标准。
6. 控制存货和监督保安成序。
7. 协助菜单和酒水单的设计工作。
8. 监督餐厅的服务。
9. 控制每个人员的分配，以确保顾客的期望得到满足而达到预期的人员成本。
10. 协助餐厅经理进行就职培训，及在职培训。
11. 为提高员工的工作技能及自信心，在每个班次的工作之后总结他们的工作表现。
12. 通过体现自身的专业素质，为餐厅的其他员工树立良好榜样。
