1. 负责西餐冷菜区域的日常运营与管理,确保冷菜制作流程顺畅高效。
2. 监督并指导冷菜厨师团队,确保菜品质量、口味及呈现标准符合餐厅要求。
3. 研发新菜品,结合季节变化与顾客反馈,不断创新冷菜菜单,提升顾客满意度。
4. 控制冷菜成本,合理规划食材采购量,减少浪费,确保成本控制有效。
5. 确保冷菜制作区域卫生安全,遵守食品安全法规,定期进行设备维护与清洁。
6. 协调与其他部门(如热菜厨房、服务部)的沟通,确保菜品供应及时,提升整体服务效率。
7. 参与制定并执行冷菜部门的培训计划,提升团队专业技能与服务意识。

1. 拥有至少3年以上西餐冷菜制作经验,其中1年以上主管或同等管理职位经验。
2. 精通西餐冷菜制作工艺,熟悉各类食材特性及搭配原则,具备良好的创新能力。
3. 具备良好的团队管理能力与沟通协调能力,能有效激励团队,处理突发情况。
4. 拥有较强的成本控制意识与数据分析能力,能够通过数据驱动决策。
