1、负责酒店点心房的日常运作和全面技术管理,同时组织和指挥点心厨房工作,监督食品制作,按规定的成本生产优质产品。
2、制定各种点心规格标准与食谱方案,以达到部门餐饮销售目标及毛利率指标要求。
3、检查所订原料是否符合质量要求,根据经营情况确定所需食品的采购量并制定每周或每月的食品计划表,提前填写申购单交至采供部进行集中采购以确保正常运营所需的充足食材供应;认真执行食品卫生法把好食品加工制作的各个环节保证食品安全卫生防止食物中毒事故的发生。
4、正确调配安排人员的工作岗位并做好考勤记录以及绩效考核等工作内容以激发员工士气提高工作效率和质量水平;定期组织召开班前会议传达上级指示精神总结工作经验教训并提出改进措施意见以便更好地完成工作任务目标要求等事宜安排。
1、五年以上星级酒店相关工作经验,其中至少两年以上同等职位任职经验。
2、熟悉各类中西式面点的制作工艺流程及相关设备设施的操作方法原理知识等。
