1. 协助总厨统筹厨房日常运营,包括菜品研发、标准制定、成本控制及人员排班管理;
2. 监督各岗位操作规范与食品安全执行情况,确保符合国家餐饮服务食品安全操作规范;
3. 主导后厨团队技能培训与绩效辅导,提升整体出品质量与服务效率;
4. 在总厨缺席时,全面代行其管理职责,保障厨房运转顺畅与出品一致性;
5. 参与菜单优化与季节性新品测试,协同前厅反馈持续改进菜品呈现与口味稳定性。

1. 中等职业教育学历(中专/技校/职高),烹饪工艺与营养、中西餐烹饪等相关专业优先;
2. 具备3年以上星级酒店或中大型连锁餐饮企业后厨工作经验,其中至少1年担任领班或主厨助理及以上岗位;
3. 熟练掌握中餐热菜制作工艺,具备扎实的刀工、火候控制及复合调味能力,能独立完成宴席级菜品出品;
4. 熟悉厨房SOP流程、食品安全管理体系(如HACCP基础要求)及常用厨房设备操作与维护;
5. 具备良好的团队协作意识与现场协调能力,能承受高强度工作节奏并保持稳定出品质量。
