The InterContinental Hotels Group® properties in Dubai Festival City consist of four hotels. These include the luxury brand InterContinental, the lavish long-stay InterContinental Residence Suites, the superior upscale Crowne Plaza, and the vibrant mid-scale Holiday Inn & Suites. In addition to over 1600 rooms, the four properties boast a selection of 16 restaurants and bars, an impressive 3,800-square-metre Event Centre across two levels, the 5,000-square-metre Festival Arena by InterContinental, the luxurious Spa InterContinental, and state-of-the-art gymnasium and swimming pool facilities. A little taste of your day-to-day

  • Implement and/or display any new procedure immediately at the request of superiors.
  • Consistently take into account feedback from management and apply it promptly.
  • Immediately report any issues affecting service or customer management that may partially or entirely hinder adherence to standards.
  • Adhere strictly to health and safety regulations, fire prevention protocols, and the Internal Regulations.
  • Follow instructions for the use and cleaning of equipment to prevent damage and ensure safety.
  • Be fully knowledgeable about all benefits available to IHG customers (IHG Members).
  • Responsible for setting up tables, glassware, and stands. Maintain cleanliness and stock of the day’s cellar. Ensure regular cleanliness of the glassware table. Create and oversee wine list appellations and vintages. Ensure wine lists are clean and up-to-date.
  • Ensure that all tasks are completed within allocated timeframes. Minimise breakage. Manage orders for aperitifs, wines, digestives, and hot and cold drinks. Advise customers on and sell drinks, including aperitifs, wines, and digestives.
  • Coordinate the service of drinks with food. Identify and create additional sales opportunities by attentive listening and advice. Uphold the customer experience and satisfaction, ensuring quality standards are met.
  • Support the integration and training of Clerks, Half Chef de Rangs, Trainees, and Apprentices.
  • Take a proactive sales approach to optimise revenue. Offer innovative solutions for loss management or income optimisation. Ensure reliable communication of information to customers. Adhere strictly to cancellation/offering procedures, maintaining traceable and justifiable records as required by management.
  • Ensure traceability and accuracy in cash transactions. Collaborate with the Manager on pricing.
  • Responsible for wine orders and for managing beverage costs for the service.
  • Ensure the uniform and personal presentation comply with internal standards.
  • Follow the schedules established by management, remaining available to fulfil duties at any required time, including day, evening, or night shifts.
  • Maintain a consistently friendly and courteous demeanour with colleagues while providing efficient service.
  • Ensure all equipment functions properly and report any faults or operational issues to management.
  • Stay informed of new techniques that may improve working conditions and service efficiency.
  • Recognise and acknowledge guests and members of Hotel Management and IHG.
  • Carry out any other tasks relevant to the role, either on a punctual or regular basis, as directed by management.
  • Maintain and exemplify the best brand image of the restaurant through both verbal and non-verbal communication, as well as exemplary conduct.
  • Ensure effective communication within the department and throughout the hotel. Demonstrate initiative and attend departmental meetings.
  • Be knowledgeable about all essential elements of the service and stay informed of other relevant departments’ operations as needed.
  • Keep knowledge up-to-date on all service-related matters.

What we need from you

  • Certification as a Sommelier or WSET (Wine & Spirit Education Trust) qualification is highly desirable.
  • In-depth knowledge of French and international wines, with an ability to pair wines expertly with French cuisine.
  • Exceptional communication skills, with the ability to engage and educate guests warmly and professionally.
  • A collaborative, team-oriented approach, with flexibility to support various restaurant functions.
  • Strong organisational skills to manage inventory and track wine sales.
  • Ability to maintain composure and make thoughtful recommendations under pressure.
  • Warm, professional. and inviting personality.
  • Willingness to learn open-mindedly.
  • Passion of food and curiosity for something new.
  • Basic organisation skills in restaurant operation.
