As Chef de Partie -Pastry you are responsible for  full responsibility for all aspects of the daily bakery and pastry  operation for the entire kitchen department but not limited to take active part in the actual food preparation and to ensure that products are consistently prepared according to the highest possible standards, manage the bakery and pastry staff and to ensure that bakery and pastry equipment is maintained properly, that the highest standards of cleanliness are kept and that safe food handling is practiced at all times, establish regular work schedules, section plans and rotations for the bakery and pastry staff in conjunction with the Executive Chef, ensure that a  high standard service is provided at all times and to deal with guest complaints and comments in an efficient and timely manner.

 

A little taste of your day-to-day: 

  • To oversee the daily bakery and pastry operation, safe food handling of bakery and pastry personnel in conjunction with the Sanitation Officer and maintenance of all bakery and pastry equipment’s
  • To ensure that products are consistently prepared according to the highest possible standards and to follow the set standards for breakfast, lunch, dinner and buffets, as well as for the staff
  • To train, coach, council, support and delegate all of the bakery staff
  • To guide the staff and to ensure that everyone is updated with relevant information at all times
  • To ensure that all bakery and pastry personnel comply with the latest Health and Sanitation regulations at all times and to oversee the entire cleaning procedure in the bakery
  • To know the requirements of the menus and to forecast and requisition bakery items according to operational needs through the hotel stores in conjunction with the Executive Chef
  • To report any maintenance issues in the bakery in a timely manner and to ensure that the work orders are followed up on accordingly
  • To monitor and control the inventory of the bakery
  • To adhere to, and to ensure that the bakery and pastry staff adheres to all company policies and procedures, manuals and directives
  • To assist the Executive Chef in controlling the food cost as well as the overall operational costs
  • To monitor and control the use of consumables in the bakery
  • To ensure that company property is maintained properly and treated with respect at all times

 

  • To ensure all newly hired bakery staff are instructed on all safe/proper bakery and pastry equipment’s handling and to ensure that safe/proper bakery and pastry equipment’s handling is practiced at all times
  • Introduction of job duties and departmental functions including continuous on-the-job-training and safe lifting techniques for the bakery and pastry staff
  • To follow up and maintain a continuous training program in regards with international baking techniques
  • To encourage and demonstrate good communication, excellent teamwork and continuous training, coaching and counseling
  • Wears uniform with pride and honor
  • Any other duties as assigned by the management

What We need from you:

  • Bachelor’s degree or equivalent certificate in culinary arts  
  • 5+ years’ experience as bakery and pastry chef and at least   2 years of experience in a more leadership position in any hotel properties.
  • Must be Intermediate in MS office Packages.
  • Must be fluent and written and spoken English 
  • Must speak local language(s)
